Centuries-old heritage wheats have recently made a big comeback as a complement (or alternative) to traditional wheat flours. Along with their whole-grain nutrition, heritage wheats such as spelt and White Sonora offer a sweeter nutty flavor profile when compared to other grains. Baking with spelt results in a lighter end product than other whole wheats.
